This weekend we had friends come over Saturday night for dinner. We knew it had to be healthy because it was our trainer and his very health conscience girlfriend. I found a recipe for grilled salmon and other than that, we went to the grocery store with no other plan. It was nice to go without a plan and be able to whip up an easy dinner that tasted great. Jon made some meat infused with garlic and grilled in a cast iron pan. It was very nice and tender. I made a Lemon and Lime Grilled Salmon. SOOOO EASY. 1 tablespoon each: chopped tarragon, lime zest, lemon zest, olive oil. 3 Tablespoons of lime juice. Pepper to taste. Rub it over the salmon, marinade for 15 minutes, grill 3-4 minutes each side. EXCELLENT. Anyway, we also served tasty rice, asparagus, drank lots of wine and served grilled peaches and ice cream for desert. I'm proud of us for just being able to whip up a tasty dinner without any real plan. We're becoming skilled.
